Mexican lasagne

Photobucket

I got this recipe from Laura and I love that it's easy as well as being low in points.

Chop and fry an onion and a pepper (red, yellow, orange, green - it doesn't matter).
Chop up a couple of chicken breasts, add to the onion and pepper and fry.
Drain and throw in a tin of beans (flageolet, cannelini, haricot - it doesn't matter).
Chuck in a small jar of salsa (hot or mild - it's up to you), stir through.
Chuck in a 300ml carton of sour cream (I buy the low-fat one), stir through.
In an oven dish layer the mixture and tortilla wraps as you would build a lasagne.
Top with grated cheese and put into a hot oven until heated through and the cheese is golden and bubbly.

We had this with a salad tonight.
