Chicken and chips
After a horrible, no-good afternoon I just threw some chicken breasts and chips into the oven and Grant did steamed butternut and onion. Brownies and ice cream for dessert because I NEED COMFORT FOOD TODAY!

Lasagne and macaroni cheese
We had the Coyles visiting and we had lasagne, macaroni cheese, steamed carrots and corn, and garlic bread. Sticky toffee pudding and ice cream for dessert.

Potjie
Our main meal was in the afternoon when visiting with my uncle, aunt and cousins - we had the most divine potjie I've ever tasted, served with rice. I made brownies and German apple pudding with ice cream for dessert.

Chicken legs and thighs done in the crockpot, roast potatoes, steamed baby corn, broccoli and carrots, with gravy. Crockpot chocolate sauced pudding for dessert

Hamburgers for supper, with chocolate rice crispy nests with little chocolate eggs in for dessert.

Poppy seed chicken
2 large skinless, boneless chicken breasts
1 tin cream of chicken soup
about 70 Ritz crackers, crushed into coarse crumbs
125ml sour cream
2 tablespoons poppy seeds
2 tablespoons butter, melted
Chop the chicken breast into bite size pieces and sautee until cooked. Add soup, sour cream, half of the crackers and half of the poppy seeds. Mix and pour into an oven dish. Mix remaining Ritz crackers and poppy seeds together and sprinkle over chicken mixture. Drizzle melted butter over top. Bake 30 minutes at 180.

For dessert we had Nutella brownies - so quick and easy. Just whisk together half a cup of Nutella with one egg, then mix in 5 tablespoons of plain flour. Turn into a dish and bake until just set.

Lamb shanks
It's Mother's Day and my oven broke when I turned it on to cook our roast dinner. Something blew and it tripped the electricity and when we turned it back on the oven just wouldn't heat up.
Luckily we were having lamb shanks so we did them in the microwave. I turned the grill on quite high, lowered the rack and let the grill heat the oven and that's how we did the roast potatoes. I turned the sticky toffee pudding into my crockpot on high and it cooked that way. We also had steamed carrots and broccoli.

Paninis
We've been wanting to replace our snackwicher and buy a new one to ship over to NZ. I spent some time looking at reviews on the Argos website and we decided to get the Cookworks Signature Panini Press instead. Lucky for us Grant got £30 in Argos vouchers from work at Christmas time so it didn't even cost us anything.
So we used our new panini press to make paninis (cheese and ham, cheese and onion) and toasted sandwiches (cheese and beans) for supper. We had peppermint crisp dessert for pudding as it's my no-count day and I had to make it to photograph for my e-book.
