Pizza

Our ward was split and we have church in the afternoon so our main meal was at lunch time. I made homemade pizza topped with sausage, bacon, red pepper and pineapple.

Baked Pasta with Sausage, Tomatoes and Cheese

200g dry pasta
400g sausage, casings removed [I used Weight Watches sausages]
1 onion, chopped
1 garlic clove, minced
1 tablespoon tomato paste
salt
black pepper
paprika
Iatlian herbs
1 tin diced tomatoes
fresh baby spinach leaves (optional)
grated mozzarella cheese
grated Parmesan cheese

Preheat oven to 180.

In a large pot of boiling salted water, cook pasta according to package directions - drain and side aside.

Meanwhile, cook sausage and onion, in a large skillet over medium heat until browned, stirring to crumble. Add garlic and cook until fragrant, about 1 minute. Stir in tomato paste and let cook for 1 minute. Stir in seasonings and tomatoes then bring to a boil, cover, reduce heat and simmer 10 minutes, stirring occasionally.

Combine cooked pasta and sausage mixture. Scoop half of the pasta mixture into a 4-quart casserole coated with nonstick spray. Top with the baby spinach leaves, if using, and half of mozzarella and Parmesan. Repeat layers. Bake until bubbly, about 25 minutes.

Grant and I enjoyed this more than the kids did, although it could just have been their moods.

Toscano soup

5 potatoes, peeled, halved, and sliced in ¼” slices
1 medium onion, diced
2 cloves garlic, finely minced
450g sausage meat
600ml boiling water
3 chicken stock cubes
1½ cups frozen spinach
100ml cream
parmesan cheese

Stir the sausage meat on medium to medium high heat and break it up as it cooks. When the sausage is halfway done, add the potatoes, onion, and garlic.

Continue to cook until sausage is no longer pink, and the edges of the potatoes are translucent. Add the boiling water, stock cubes and frozen spinach. (The stock cubes might sound like a lot but the potatoes absorb the saltiness.) Reduce heat to low and cover with a lid. Simmer for 20-30 minutes. When potatoes are fork tender, remove from heat and stir the cream in (I just used tinned cream as I don't usually have cream in the house). Sprinkle with a little parmesan cheese and serve.

Grant really liked this soup.

We had friends round for a BBQ for lunch and dinner was a repeat - salad, potato salad, three bean salad, burgers, rolls, sausages. Yoghurt fridge tart for dessert.

Hot dogs and sausage soup

We had our main meal at lunch time (low fat oven chips and salad with steak for Grant and me and turkey dinosaurs and beans for the boys) so for supper we just had hot dogs and sausage soup. Grant and I had the soup rather than eating more hot dogs (we each had one) because we're watching our weight.
