Some of this week's meals

Chilli - super quick and easy: just sautee some mince and add taco seasoning, a drained can of kidney beans and a jar of salsa. We had it with rice, salsa flavoured corn chips, a smidge of sour cream and a sprinkle of cheese.

I made this recipe for lunch and it was YUM! I halved the recipe, made it in a small pie dish and ate half of it for lunch.
The only changes I made to the recipe were:
- used a small onion (and sauteed it) rather than spring onions as I didn't have any
- I used fresh spinach instead of frozen, but chopped it and wilted it down with the onions
- don't know what "Asiago cheese" is so I used grated parmesan as I always have a tub of it in the freezer
- left out the dill
- regular flour instead of wholewheat

I could not believe how much Noah ate! He didn't like them at first - they are drier than regular sausage rolls (much less fat) but then Grant got him to try them dipped in a little ketchup and he loved it. I served them with gravy and steamed carrots, peas and corn.

Homemade pizza for the boys, while Grant and I had homemade Weight Watchers friendly meals out of the freezer (bobotie and brown rice).

Some of this week's meals

Homemade hamburgers with oven wedges.

Chicken thighs "roasted" in the slow cooker, served with potato puffs, gravy, and steamed carrot, broccoli, corn and peas.

I left out the lemon zest and used leftover chicken instead of bacon (I think it would be awesome with the bacon though!) Everyone liked it - what a miracle - although Noah did pick out the spinach.

Beef stew with rice and steamed Brussels sprouts and broccoli.

I couldn't find pasta shells so I just did the pasta, cheese mixture and tomato mixture in layers. I also halved the recipe as the original serves 12.

Some of this week's meals

Pork chops with roasted diced potatoes, steamed carrots and broccoli, and gravy.

I only had 10 inch tortillas so I used 4. I found this recipe serves 4 if the enchiladas are all you have. They were delicious! However, the kids didn't think so and acted as if I was poisoning them.

Stuffed pepper soup (link to recipe) out of the freezer as I wasn't in the mood to cook after a day at work.

Bobotie served with rice and steamed carrots and broccoli.

Pam's Lamb stir-fry (frozen product). It was okay, probably won't re-purchase.

Some of this week's meals

Slow cooked BBQ beef (link to recipe)

We had this on rolls with not much else - bit of a rushed meal. It was good but the sauce is quite strong - I'll use fewer ingredients next time and add some water.

Delicious. It is a small-ish portion, don't know if it would truly feed 6 as the recipe states. We got 4 generous portions out of it - in future I'd probably split it into 5.

Pasta with Italian chicken sausage, peppers and escarole (link to recipe)

I tweaked it a little: left out the red pepper flakes, added a can of chopped tomatoes to the sausage mixture, and left out the escarole.

Cheeseburger casserole (link to recipe)

I didn't have turkey mince so I used 350g steak mince and the rest turkey sausage meat. I also didn't have low fat evaporated milk or the cheese product - I used grated cheese and low fat sour cream. Everyone except Noah enjoyed this. I found the recipe served 4, not 6 (the portions would have been too small) but maybe that was because I was so hungry by the time it was ready.

Meatball pasta bake

Weight Watchers Seriously Satisfying cookbook, page 84. Basically it's pasta, herbs, garlic, tinned tomatoes, then you put meatballs on top and some mozarella cut up over it and bake it in the oven. It's a bit of a faff to make, what with browning the meatballs and all, and tasted merely okay so I won't be making it again.

WW sausage and lentil casserole

Tonight I made WW sausage and lentil casserole. 11 ProPoints, taken from the cookbook Cook! page 58. We didn't have potatoes so I served it with rice instead.

Daniel, surprisingly, absolutely loves this and actually ate a decent amount. The usual battles with Noah commenced but in the end he ate a small portion.
