Last week's meals

Pollo in Pottachio (link to recipe)
I've made this before and we all enjoy it. I use stock or fruit juice in place of the wine. I served it on pasta.

Slow cooker beef stew served with pasta or rice.

Jacket potatoes with cheese and baked beans.

Homemade pizza with ham and pineapple on.

Chinese style sticky pork served with rice and stir-fried vegetables.

Low fat oven chips with oven fish.

Toasted sandwiches with cheese and baked beans or ham and cheese.

Poppy seed chicken (link to recipe) served with rice.

Fresh fish

Now that we are a little more settled here in NZ I thought I'd start posting here again. Tonight we had fresh kahawai fish, caught today by Grant. (He went fishing on Paul's boat with another friend, Thomas.) It was delicious. We had it with shoestring fries and steamed corn and peas.

Fish and chips; Meatballs and hash browns

Grant was making supper and I saw he was doing hash browns, veg and Ikea meatballs (chicken and beef). I've been really trying hard with Weight Watchers this week and Ikea doesn't put the nutritional info on the meatballs so I didn't know how many points there are so I did oven fish and low-fat oven chips for myself with veg so I could track it. We enjoyed some Spur sauce with it.

Tuna Pasta

I'm not sure where this recipe came from, my mom may have thrown some bits together and tuna pasta was born or she may have gotten the recipe from someone, I don't know, but I got it from her, it's pasta, tuna, powdered mushroom soup, frozen veg, tomato sauce, vinegar and pepper. You throw it all in one pot and within 30 mins you have a quick and tasty meal.
